From fine-dining to fish and chips

Well-known restaurant owner and cookery writer, Rick Stein, has been championing fish for many years now. One of his latest ventures is fish and chips – and TISSL has helped the group’s ‘chippies’ to reduce wastage and increase sales

Rick Stein and his ex-wife Jill own and run four restaurants in the Cornish  fishing village of Padstow and opened Stein’s Fish & Chips six years ago, giving everyone the opportunity to sample some of the well-known chef’s fare. Today, the outlet is very much a tourist destination in itself and, in the heart of the season, queues can stretch down the street. As Rick Stein says: “Nothing is more exhilarating than fresh fish, simply cooked.”

Stein’s Fish & Chips outlet in Padstow was joined in March 2010 by Rick Stein’s Fish & Chips – this time in Falmouth, on the south coast of Cornwall.

Visitors to Stein’s Fish & Chips can either eat-in or take-away and enjoy fish such as cod, haddock, plaice, monkfish and sea bream, along with freshly-made tartare sauce, curry sauce and mushy peas.

“We pride ourselves on the quality of our food and we know where everything comes from,” says Martin Glinski, Food & Beverage Manager at The Seafood Restaurant.

When Stein’s Fish & Chips first opened in Padstow, the outlet had a system which Martin says was little more than a ‘cash register’.

“It was extremely inefficient and we knew we had to get a system in which would speed up customer service – which is key in a take-away establishment – and offers us better data reports,” says Martin.

The team at Stein’s looked at seven different EPoS systems and narrowed that down to a shortlist of two – with TISSL’s system winning through.

“What made the team at TISSL really stand out was that they were really keen to work with us and took time to understand our business and what we wanted to achieve,” says Martin. “The TISSL system is simple and quick to use and links to easy-to-read screens in the kitchen, which makes the chef’s job much easier.”

TISSL worked alongside the team at Stein’s, offering them three days of training and has been on hand to offer support, whenever needed, since then.

“The TISSL EPoS system has enabled us to process orders through more quickly and more efficiently,” says Martin. “When you’ve got a queue of people – that really matters.”

Since the system has gone in, there has been a significant reduction in wastage.

“Previously, orders were verbally communicated through to the kitchen which could lead to mistakes being made and incorrect orders being wasted,” adds Martin. “It’s also helpful for the company to have accurate sales data from Stein’s Fish & Chips and we are currently working with TISSL to link with our stock and management information system, which will also save us money and make our operation more efficient.”

Rick Stein says that it was a natural progression to open up in Falmouth and that, outside of Padstow, it is his ‘favourite seaside town in Cornwall’. Falmouth offers a menu similar to Stein’s Fish & Chips in Padstow, but also serves roasted fish from a charcoal oven.

The Falmouth outlet is larger than Padstow and, as well as the restaurant and take-away, it also includes a Seafood Bar to celebrate loyal oysters and shellfish.

When the new outlet in Falmouth was being planned, Stein’s turned to TISSL to install the EPoS there as well.

“After our very positive and well-established relationship with TISSL in Padstow and the excellent experience of working with their system already, it was a natural progression to invite them to install their terminals in the new restaurant as well,” says Martin.
